Overview

At Malta Marriott Hotel & Spa, we are looking to recruit a Sushi Chef who is positive, creative, dedicated, and passionate about delivering exceptional culinary experiences. Responsibilities:

• Prepare and present high-quality sushi, sashimi, nigiri, and other Japanese-inspired dishes according to company standards

• Ensure all food products are of excellent quality, fresh, and stored correctly

• Maintain the highest standards of food hygiene, safety, and cleanliness at all times

• Prepare all mise-en-place required for daily operations and menu offerings

• Monitor stock levels and assist with ordering and inventory control

• Ensure proper handling and storage of fish, seafood, and other perishable ingredients

• Be environmentally aware and minimise food waste wherever possible

• Keep all working areas clean, organised, and free from cross-contamination

• Report any maintenance, hygiene, or hazard issues promptly

• Work closely with the Director of Culinary, Executive Chef, Sous Chefs, and kitchen team to ensure smooth operations

• Respond positively and efficiently to guest requests and dietary requirements

• Support the training and development of junior kitchen team members when required

Requirements:

• Ability to work independently and as part of a team

• Positive attitude with a passion for Japanese cuisine

• Ability to communicate effectively in English

• Commitment to delivering excellent customer service

• Ability to work flexible hours, including evenings, weekends, and public holidays

• Possession of a valid Food Handling Licence

• Minimum 1 year of experience as a Sushi Chef or in a similar role

• Knowledge of seafood handling, preparation, and storage requirements

• Ability to work efficiently in a fast-paced environment
