Overview

At Malta Marriott Hotel & Spa, we are looking to recruit a Senior Chef de Partie who is positive, creative, dedicated, and passionate about everything they do and who is proud to be associated with one of the most recognisable hospitality brands in the world. This is where you come in.

Responsabilities:

• Take full responsibility for the daily operation of the assigned kitchen section

• Prepare, cook, and present dishes in line with approved recipes, SOPs, and presentation standards

• Ensure all food items meet required quality, taste, portion, and appearance standards

• Plan daily mise en place and ensure timely delivery of food during service

• Supervise, guide, and support Chefs de Partie, Demi Chefs de Partie, Commis, and Trainees

• Ensure proper use, care, and cleanliness of kitchen equipment and work areas

• Monitor stock levels, assist with ordering, and ensure correct storage and stock rotation

• Control waste and contribute to food cost management

• Ensure compliance with food safety, sanitation, hygiene, and health regulations

• Conduct regular checks to maintain cleanliness and organization of the section

• Communicate effectively with Sous Chefs and kitchen management regarding operations and issues

• Assist in menu development, new dish testing, and special events as required

• Step in to perform supervisory duties in the absence of senior kitchen leadership

Requirements:

• Ability to speak, read, write, and understand the primary language(s) used in the workplace

• Strong verbal and basic written communication skills

• Proven experience as a Chef de Partie or similar role

• Strong knowledge of cooking techniques relevant to the assigned section

• Solid understanding of food safety, sanitation, and hygiene standards

• Leadership and mentoring skills

• Ability to work effectively in a fast-paced kitchen environment

• Strong organizational and time management skills

• Attention to detail and commitment to quality

• Physical ability to stand for long periods and handle kitchen equipment
