At Malta Marriott Resort & Spa, we are seeking a passionate, creative, and motivated Sous Chef to support our culinary team and uphold the highest standards of quality, consistency, and guest satisfaction.
Key Responsibilities
• Oversee kitchen operations during assigned shifts in the absence of the Head Chef.
• Ensure all food meets Marriott standards in quality, presentation, and consistency.
• Support menu development, seasonal offerings, and continuous product improvement.
• Supervise, train, and mentor kitchen staff to ensure efficient performance.
• Maintain portion control, recipe standards, and proper plating guidelines.
• Coordinate with Restaurant Managers on menus, specials, and guest requirements.
• Monitor guest feedback and ensure high levels of satisfaction.
• Assist with ordering, stock control, and cost management.
• Maintain hygiene, HACCP, and food safety standards always.
Requirements
• Diploma or Certificate in Food Preparation from a recognised Catering Institute.
• Minimum 3 years’ experience in a high volume kitchen
• Strong knowledge of HACCP, food safety, and kitchen operations.
• Proven leadership and team management skills.
• Ability to maintain consistent quality and control food costs.
• Strong organisational and problem-solving abilities.
• Flexible and able to work evenings, weekends, and holidays.
